I want to share these recipes with you, as always! So I have decided I will be meal planning my suppers from now on in 2-week intervals. So I will post my meal plan every two weeks and the recipes daily! Starting today, November 4th, 2022, with stuffed peppers with apple salad.

Here is today’s recipe! I will be posting pictures of the final product in tomorrow’s blog!


Stuffed Peppers with Apple Salad

Stuffed Peppers


What you need: 

  • 3 large green peppers.
  • 1 medium yellow onion, chopped finely. 
  • 1 ½ cups of shredded fiesta blend cheese. 
  • 1 pound of 80/20 lean ground beef. 
  • 1 ¼ tsp of Salt, divided. 
  • ½ tsp of dried oregano. 
  • 1 ½ tsp of chili powder
  • ½ tsp ground cumin. 
  • A pinch of seasoned Salt.
  • 3 tablespoons of extra-virgin olive oil. 
  • ¼ tsp of baking soda. 
  • 3 minced garlic cloves. 
  • 1 8 oz can of tomato sauce. 
  • 1 cup of cooked white rice. 

Steps:

  1. Preheat your oven to 425°F or 220°C. 
  2. Combine ground beef, baking soda, and 1 tsp of Salt by mashing it with your hands. Let the mixture sit for roughly 15 to 20 minutes. 
  3. Line a 9×13-inch oven-safe dish with aluminum foil. Cut the tops of your peppers off and clean out the seeds inside. 
  4. Then, place your green peppers cut side up in the baking dish. Drizzle with a bit of olive oil and about a pinch of Salt. 
  5. Sear your peppers in your oven until they have slightly browned and become somewhat tender for about 20 minutes. 
  6. Heat 2 tablespoons of oil over medium heat in a nonstick, large frypan.
  7. Once your oil is heated, add your onion and saute until translucent and soft, around 3 to 4 minutes. 
  8. Then, add your garlic and cook for a minute. 
  9. Add your ground beef mixture to your large skillet and your cumin, oregano, and chili powder, and increase your heat to medium-high.
  10. Cook your ground beef. As you are cooking it, break up your ground beef. 
  11. After about 4 or 5 minutes, when your meat has almost browned, add your tomato sauce, and bring it to a boil. 
  12. Once you reach a boil, reduce the heat to low and cook for another 3 to 4 minutes uncovered until your meat has thoroughly cooked. Add your rice and about 1 cup of cheese, and stir until your cheese has melted. Remove your pan from the heat. 
  13. Spoon your filling into the roasted green peppers. Then, top with cheese and place in the oven for roughly 10 to 15 minutes until the cheese has completely melted, bubbled, and the filling is all the way through. 
  14. Serve once cooled. 

Apple Salad

What you need:

  • 2 Tbsp of sour cream. 
  • 2 tsp of mustard. 
  • 1 ½ Tbsp honey. 
  • 1 ½ Tbsp lemon juice. 
  • ½ tsp salt. 
  • ½ cup of dried cranberries. 
  • 3 apples of your choice. 
  • 1 cup thinly sliced celery. 
  • ⅓ cup of toasted walnuts, chopped. 
  • 1 cup of halved red grapes. 

Steps :

  1. Thoroughly combine sour cream, lemon juice, Salt, mustard, mayonnaise, and honey in a large bowl. 
  2. Once you have mixed the above ingredients, you can add grapes, celery, walnuts, apples, and dried cranberries. 
  3. Cover your apple salad and refrigerate for approximately an hour. Toss before serving.
